Preheat the oven to 280˚-310˚ Fahrenheit and then coat the pie pan with the baking spray. |

In a saucepan, melt the butter and add the sliced apples, minced lemon zest, lemon juice and cinnamon and cook for around 10-15 min. |

Beat the eggs with the sugar using a hand mixer until the mixture becomes foamy and grows in volume at least two times. |

Add the flour and beat the eggs mixture for 10 min. more. Then mix in the baking soda and pour the mixture into the apples and mix well. |

Spoon the apples mixture into the pie pan and bake for 55 min. until golden brown and crispy. |
