Remove the skin from the salt cod (traditionally it is left on), and carefully remove the bones. Cut into 3-inch pieces. |

Dredge the salt cod in flour and pan-fry in olive oil infused with the garlic and rosemary until golden on both sides. Remove from the oil and set aside to drain on paper towels. |

In a separate skillet, warm 5 tablespoons of olive oil. Add minced garlic and thinly sliced onion. When the onion starts to brown, add the tomatoes. Season with salt and pepper and cook for about 30 minutes. |

Add the fried fish to the sauce and cook for 10 minutes. Sprinkle with parsley, and serve warm or at room temperature. |
