Directions
Sometimes a seemingly lesser ingredient can also be genuinely, intimately revelatory. In a day’s end hot cocoa, one of those ingredients is culinary lavender (Lavandula angustifolia), having the sweetest and most enchanting floral notes among all species of lavender. Its calming fragrance has long been used to decrease anxiety and agitation, slowing down the nervous system and relaxing the body and mind to improve sleep quality.

Combine the cocoa powder, sugar, and salt in your favorite cup. Place lavender in a tea infuser. Add the milk and lavender to a small saucepan over medium heat until it is hot, not quite to a boil, then reduce heat and simmer for 5 minutes. |

Remove the infuser and add just a few tablespoons of the hot milk into the cocoa mix, and stir into a smooth paste with a wooden spoon. Gradually add the remainder of the milk and continue stirring until fully incorporated. |

Froth with an immersion blender until creamy and foamy. Top with whipped cream and a decorative sprinkle of lavender if desired. |
