Harissa paste is a North African chili sauce whose main ingredients are piri piri and serrano chiles, garlic, coriander, cumin, and caraway. It spices up the sweetly flavored lamb meatballs in these hearty sandwiches. It is sold in jars, cans, bottles, and tubes. Look for it in specialty food markets or online.
