This Catalonian specialty is traditionally made with a specifi c type of green onion that is grown by mounding the soil up around the sides of the onion as it grows (the same method used to grow white asparagus). A suitable substitute would be spring onions or immature torpedo onions.

Clean the onions by removing any dead outer leaves and trimming the roots off of the end (do not cut the root tip off, as this helps to hold the onion together during cooking).

Place the onions on a very hot grill and allow them to scorch on an open flame.

Wrap the scorched onions with foil (traditionally, newspaper was used) and hold for at least 15 minutes to allow the onions to steam and become tender throughout.

Serve with salbitxada.
