Melt the butter in a small pot, remove from heat, and allow to cool slightly. Peel and finely grate the horseradish. Mix the butter, eggs, horseradish, flour, and 1 tablespoon water in a bowl. |

Season with salt and nutmeg and beat with a large kitchen spoon until the dough comes together but is slightly sticky. |

Form the noodles directly into boiling salt water using a spätzle maker or a large metal colander. As soon as the noodles float to the surface, remove with a slotted spoon, allow to drip-dry, and add to desired broth. |
