Preheat oven to 300 degrees F. |

In a medium bowl, combine and sift almond flour, sugar, and rice flour together. |

In a separate bowl, mix egg whites and salt; whisk until they are foamy. Add almond extract and continue to whisk. Add egg whites and almond extract mixture to the bowl of flour; stir together. Knead with your hands until you get a sticky dough. |

Dust your hands with icing sugar. Spoon dough then roll to form one inch balls. Place each ball on cookie sheet lined with parchment paper. Be sure to leave space between each ball to allow for spreading, about two inches. |

Bake cookies for about 25 minutes, or until the tops have cracked and the bottom of the cookies are golden. |

While still hot, insert an almond on top of each cookie. |
