Directions
This is a very important Vietnamese dish, from the imperial capital of Hue. Fresh sticks of sugar cane are used as skewers. The heated cane releases a burst of sweet cane juice when bitten into.

Grind the shrimp, sugar, salt and pepper to a paste in a food processor, then combine with the ground chicken and corn-starch in a bowl, and mix until well blended. |

Lightly grease your hands with a little oil, spoon 1 tablespoon of the shrimp mixture into one hand and wrap it tightly around the middle of a sugar cane stick. Repeat with the remaining shrimp mixture and sugar cane sticks. |

Grill on a pan grill or under a preheated broiler for 5 to 10 minutes, turning frequently until crispy and slightly browned on all sides. Serve hot with a bowl of Sweet and Sour Sauce on the side. |
