Barbeque Sauce

1½ cups (325 ml) Tomato Ketchup

½ cup (125 ml) Water

2 tbsp Apple Cider Vinegar

1 tbsp Chili Powder

1/3 cup (80 ml) dark Brown Sugar

¼ cup (60 ml) runny Honey

2 tsp Paprika Powder
Directions
This is an easy and delicious recipe. There is a perfectly simple method to prepare and produce the most scrumptious melt in the mouth ribs, so just follow this recipe and you will never cease to be amazed at how flavoursome home made ribs can be.

Put ribs to one side and then place all of the remaining ingredients in a mixing bowl and whisk to combine, then set aside. Now cut 2 pieces of aluminium foil, double the size of two half racks of ribs each, then set aside. |

Meanwhile, using paper towels, pat the ribs dry. Now remove the thin skin attached to the underside of the ribs by turning the ribs over so that they are bone-side up. |

Then Starting at the end of 1 rack, slide the tip of a small sharp knife between the skin and the bone, then lift and cut through the skin. Now pull the skin (using a paper towel) towards the opposite end of the rack and completely remove the skin and repeat with the other rack of ribs. Then cut one rack in half in line with the bones and place the two pieces side by side on a sheet of foil. Repeat with the second rack on a second piece of foil. Evenly coat both sides of the ribs with the spice mix. Now wrap the foil up and over each set of ribs to create 2 totally enclosed packets. |

Place the foil parcels side by side on a rimmed baking tray. Cover the baking tray tightly with another piece of foil. (you can roast the ribs immediately at this stage, but for the best flavour and texture, I prefer to refrigerate them for up to 24 hours.) |

Now heat the oven to 170C (325°F) and place an oven rack in the middle. (If you marinated the ribs overnight, then remove from the fridge and set aside at room temperature while the oven is heating). Now place the ribs in the oven and roast until tender for about 2 hours. |
