Ingredients
-
4 ripe Peach
-
3 tablespoons Honey
-
½ teaspoon ground Cinnamon
-
¼ teaspoon ground Ginger
-
Pinch of ground Cloves
-
Pinch of freshly grated Nutmeg
-
Pinch of Salt
-
4 scoops Vanilla
-
1 pint Blackberries
Directions
Stone fruit, so plump and plentiful during my years in California, doesn’t grow in Alaska. So when I have the privilege of having some stone fruit in my kitchen, I like to highlight the natural flavors and really allow the fruit to shine.
My favorite fruit pie of all time is blackberry peach. The flavors of that pie inspired this quick dessert recipe of warm grilled peaches drizzled with pie-spiced honey, topped with good, melting vanilla ice cream and sprinkled with juicy blackberries.

Liberally oil a grill pan. Place the pan over medium-high heat. Slice the peaches in half and remove the pits. Place the peaches cut side down on the hot grill pan. Grill for 2 to 4 minutes, turning the peaches 90 degrees halfway through. Remove from the heat and set aside. |

In a small saucepan over low heat, warm the honey together with the cinnamon, ginger, cloves, nutmeg, and salt. The honey should be smooth and thin enough to drizzle. |

To assemble, place 2 grilled peach halves cut side up in a bowl. Add a scoop of vanilla ice cream over top of the peaches. Sprinkle with a small handful of blackberries and drizzle with the warm spiced honey. Repeat with the remaining ingredients. |
