Cut the courgettes lengthways into 5-mm-thick slices. Mix them with the oil and salt and marinate for 20 minutes. |

For the dressing, combine all the ingredients in a blender and process until smooth. |

Grill the courgette slices over indirect heat for 10–12 minutes each side, then pour the dressing over them and top with the pine nuts. |
