1¼ cup short-grain Rice

2½ cups Water

2 tbsp Corn Flour

4 cups whole Milk

1 1/3 cup Icing Sugar

2 tsp Vanilla Extract

Place the rice and water in a large saucepan and bring to a boil. Reduce the heat and let it simmer for about 13-15 minutes or until all the water has been absorbed. |

In a small bowl, combine the corn flour with ¼ cup of the milk. Set aside. |

Add in the remaining milk to the saucepan and bring to a boil. Lower the heat and simmer for about 25 minutes more, stirring frequently, until the rice is very soft and most of the liquid has been absorbed. Add in the sugar, vanilla or lemon zest and corn flour mixture and bring to a boil. Lower the heat and simmer again for 5 minutes, stirring frequently. Remove from heat and spoon mixture into serving bowls. Let cool. |
