2 Blood Oranges

1 cup Chicories

1 small Red Onion

½ cup Walnuts

½ cup coarsely chopped pitted green Olives

½ cup Italian Parsley

¼ cup Mint

¼ cup extra-virgin Olive Oil

1 tablespoon Sherry Vinegar

1 tablespoon freshly squeezed Lemon Juice

½ teaspoon Kosher Salt

6 cranks Black Pepper
Directions
Cook the grains up to two days ahead and store them in the fridge until you’re ready to make this recipe. You could also sear or grill the chicories for extra smoke factor. Or add other winter citrus. Yum.

Put it Together and ServeIn a large serving bowl, combine the grains, oranges, chicories, onion, walnuts, olives, parsley, mint, oil, vinegar, lemon juice, salt, and pepper. Toss, toss, toss! |
