Sauté vegetables in small amount of oil on med-high. |

Whisk eggs in small sized bowl. Pour over vegetables. |

Scramble mixture in skillet with spatula till cooked completely through. Remove eggs from pan. |

Roll ham slices around eggs. Return to skillet. Grill for several seconds on each side. 5. Serve with guacamole, salsa, etc., with cilantro to garnish. |
