2 Little Gem Lettuce

1 lb 2 oz (500 g) cooked Prawns

10 heaped tbsp Mayonnaise

2 tbsp Tomato

4 tsp Worcestershire Sauce

2 tsp Tabasco Sauce

2 tbsp Lemon Juice

Salt
-
freshly ground Black Pepper

4 tsp chopped Chives

1 Lemon
Directions
Don’t anyone dare say anything about this classic 1970s-style photo. I love it. That right there is exactly what I imagine when I dream of prawn cocktail. It’s the law. None of your fancy-pants updating-with-fruit-and-crayfish for me.

Separate the lettuces into leaves and divide them equally between 4 martini glasses. (The tacky cocktail glass is a must!) |

Sprinkle the prawns over the top. |

Mix the mayonnaise, tomato purée, Worcestershire sauce, Tabasco sauce, lemon juice, salt and pepper in a bowl. Check the seasoning, then spoon the sauce over the prawns. |

Finish with the chives and lemon wedges. |
