2 x 5 cm (2”) strips of Cucumber

3 sweet organic Tomatoes

4 black or green Olives

A handful of Rocket Leaves

This mouth-wateringly tasty treat has been a summer favourite. It is really quick and easy to make and so delightful to eat. I hope you enjoy this tasty starter or snack as much as I do. For more guests, adjust recipe accordingly.

Cut 4 triangles of wholemeal tortilla rounds into large triangles. |

Now spread with the creamy goat’s cheese. |

Add the cucumber and tomato to top, add a few leaves of rocket and then sprinkle with olives. You can drizzle balsamic vinegar or dressing to taste. |
