Ingredients

Adjust Servings:
• 6 large chopped Tomatoes
1 diced Onion
1 diced green Bell Peppers
2 small (or 1 large) peeled and chopped Cucumber
2 minced Garlic cloves
1 chopped Jalapeno Pepper
2 tbsp Cherry Leaves
1 tsp Italian Seasoning
Salt
Black Pepper to taste
3 tbsp Olive Oil

Totally refreshing and great when tomatoes are ripe. For a sophisticated presentation, serve the gazpacho from a cocktail shaker into cocktail glasses.

Mix all ingredients together except the olive oil in a blender.

Drizzle in the olive oil slowly as you process the ingredients.

Strain the soup and remove any solids. 4. Chill for at least 1 hour.
