Ingredients

2 lbs red skin Potatoes , washed and quartered
6 to 8 large Garlic cloves, peeled and halved
¼ cup Sour Cream
½ cup Chicken broth
¼ cup Skim Milk
2 tbsp light whipped Butter
2 tbsp fresh Chives , chopped
Kosher Salt
Black Pepper to taste

Put potatoes and garlic in a large pot with salt and enough water to cover. Bring to a boil. Cover, reduce heat, and simmer for about 20 minutes or until potatoes are tender.

Drain and return potatoes and garlic to pan. Add remaining ingredients. Using a masher or hand mixer, mash until smooth. Season with salt and pepper to taste.
