Directions
The flavor imparted to the bread via these few simple steps will make it hard for you to buy store-bought croutons ever again. Once complete, the croutons will keep in an airtight container in the pantry for three or four days.

In a small saucepan, combine the oil and garlic and cook until the garlic sizzles and begins to soften but does not color, about 5 minutes. Turn off the heat and let steep for 1 hour. Pick out and discard the garlic. |

Heat a large skillet over medium heat. Add the garlic oil. When the oil is hot, add the bread cubes and toss to coat. Cook until golden, toasted, and crisp, 12 to 15 minutes, adjusting the heat of the pan as you go if the bread is browning too quickly. Drain on a paper-towel-lined plate and immediately season with salt and pepper. Let cool before tossing in your favorite salad. |
