Preheat the oven to 220 °C. |

Sprinkle a work surface with semolina and roll out the dough into a rough oval shape. Place onto a baking tray. |

Spread the dough with the crème fraîche or cream cheese, and then sprinkle evenly with the bacon, spring onions and Gruyère. Dust lightly with the nutmeg. |

Bake for 5–7 minutes or until the flammkuchen is bubbling and the crust is golden brown. |

Remove from the oven and season with salt, black pepper and snipped chives. Cut into slices and serve hot. |
