Ingredients

Adjust Servings:
Semolina , for rolling
½ quantity Basic Bread Dough
100 g Creme Fraiche or cream cheese
100 g diced Bacon , sautéed
5 spring Onion , sliced
100 g Gruyere , grated
1 ml Nutmeg
Salt
freshly ground Black Pepper
10 g fresh Chives , snipped

Preheat the oven to 220 °C.

Sprinkle a work surface with semolina and roll out the dough into a rough oval shape. Place onto a baking tray.

Spread the dough with the crème fraîche or cream cheese, and then sprinkle evenly with the bacon, spring onions and Gruyère. Dust lightly with the nutmeg.

Bake for 5–7 minutes or until the flammkuchen is bubbling and the crust is golden brown.

Remove from the oven and season with salt, black pepper and snipped chives. Cut into slices and serve hot.
