Ingredients

Adjust Servings:
550 grams of left over roast vegetables or 2 cups of thinly sliced Potatoes , carrot, pumpkin, kumara, onion
150 grams of Feta Cheese
2 cups green vegetables- Broccoli , beans, silver beet, spinach chopped
5 Egg
250 grams Cottage Cheese
¼ cup grated Cheese
Salt
Black Pepper to taste

Grease a large baking dish or square cake tin. If you are using spinach or silverbeet chop and put into the microwave with a little water for 1 minute.

Then put all the chopped vegetables into the baking dish. Cut feta into small pieces. In a bowl beat eggs and cottage cheese together add salt and pepper.

Add feta and egg mixture and stir through vegetables. Sprinkle cheese on top and bake for 25 – 30 minutes until set.

Cool a little and cut into wedges and serve with salad. Eat hot or cold.
