550 grams of left over roast vegetables or 2 cups of thinly sliced Potatoes

150 grams of Feta Cheese

2 cups green vegetables- Broccoli

5 Egg

250 grams Cottage Cheese

¼ cup grated Cheese

Grease a large baking dish or square cake tin. If you are using spinach or silverbeet chop and put into the microwave with a little water for 1 minute. |

Then put all the chopped vegetables into the baking dish. Cut feta into small pieces. In a bowl beat eggs and cottage cheese together add salt and pepper. |

Add feta and egg mixture and stir through vegetables. Sprinkle cheese on top and bake for 25 – 30 minutes until set. |

Cool a little and cut into wedges and serve with salad. Eat hot or cold. |
