Preheat the oven to 375°F. Arrange the sausage in a 9-x-13-inch baking dish. |

In a large bowl, toss together the tomatoes, onion, garlic, olive oil, vinegar, oregano, salt, and pepper. Pour the mixture over the sausages. |

Bake for 30 minutes. Add the bok choy and beans to the casserole and stir to mix. Bake for 20 minutes, or until the casserole is slightly browned on top. Remove from the oven and let rest for 5 minutes before serving. |
