Ingredients

1 cup peeled Egusi

1 cup tinned plum Tomatoes

½ cup chopped Spinach

1 medium Onion

1 small Scotch Bonnet

2 teaspoons Seasoning

¼ cup Vegetable Oil

½ teaspoon Curry Powder
Directions
Egusi seeds (name may vary) are popularly found in melons grown in many parts of Africa such as in Mali, Ghana, Togo and Nigeria. Egusi is a protein and fat rich seed derived from melons, it is then dried and ground to make a soup.

Add Egusi (melon) seeds, plum tomatoes, scotch bonnet and ½ cup of water to a blender, and blend until smooth then place aside. |

Place a pot on medium heat and add vegetable oil |

Add chopped onions and curry powder and fry for 3 minutes. |

Add blended Egusi mixture to a pot and simmer for 5 minutes. |

Add seasoning and ⅓ cup of water and leave to simmer for 5 more minutes. |

Add chopped spinach and allow to cook for a further 7 minutes before turning heat off. |

Serve with a swallow, e.g. Fufu or Eba. |
