Eggs Benedict gets a meaty makeover with ground beef to deliver an appetite crushing breakfast or brunch.

In a bowl, combine the ground beef with the salt and pepper, and lightly mix to thoroughly combine. |

Using clean hands shape the mixture into 4 (½” thick patties). |

Over moderate heat, covered, grill the burgers for 4-6 minutes on each side, until a meat thermometer inserted into the thickest part of the mean registers 160 degrees F. |

Next, grill the buns, cut side facing downward, until golden and toasted. |

In the meantime, prepare the hollandaise sauce, using milk according to the manufacturer's instructions. Stir in the mustard and keep the sauce warm. |

Over moderate-high heat, heat a skillet coated with nonstick cooking spray. |

One at a time, crack the eggs into the skillet, reducing the heat to low. |
