½ cup Bread Crumbs

2 tbsp Parmesan Cheese

¼ tsp Black Pepper

¼ tsp dried Parsley

4 slices of Eggplant

8 oz ground Beef

a dash of Garlic Powder

½ cup Marinara Sauce

¼ cup Mozzarella Cheese

1 cup Arugula
Directions
Eggplant is a very divisive vegetable, not everyone appreciates it but here is a good way to enjoy it.

Heat charcoal/gas grill to medium-hot. |

Preheat oven to 375°F. Grease baking sheet with oil. |

In a shallow bowl, mix 1/3 cup of the panko, 1 tbsp. Parmesan, a dash of black pepper and parsley flakes. |

Dip each slice of eggplant in one beaten egg white first, then into the crumb mixture. Lay crumbed slices unto greased baking sheet. Gently spray some cooking spray over the slices. |

Bake for 30 minutes or until the slices are crispy and golden, turning only once. |

While the eggplant is being cooked, mix the meat with the remaining panko, the second tbsp. of Parmesan and the other egg white. |

Add a dash of pepper and garlic powder. |

Divide the mix into 4 (½” thick) patties. |

Lay them on the grill and place them directly above the heat. Close and grill for roughly 10 minutes or until internal temperature is 160°F, turning only once. |

Top each slice of eggplant with a patty and some marinara sauce. Sprinkle mozzarella over each and top them with arugula. |
