1 x ¼” cut pieces of seedless Cucumber

1 cup of Feta Cheese

1/3 cup of Cilantro

3 sliced Green Onion

¼ cup of Olive Oil

3 tbsp of Lime Juice

ground Black Pepper
Directions
Cool cucumbers meet pressure-cooked beans along with feta, bright cilantro and lime. This refreshing salad is a wonderful dish for any time of year.

For the BeansPlace the beans with 1 tsp. of salt, oil and 3 quarts of filtered water in large sized pressure pot. |

Secure the lid. Set manually for 25 minutes. Allow pressure to build. Once timer goes off, turn pot off. Release pressure quickly and carefully remove the lid. |

Allow the beans to sit in their cooking liquid for ½ hour and then drain them. |

For the SaladPlace the cooked beans, along with lime juice, oil, green onions, cilantro and feta cheese, in large sized bowl. Season using a tsp. of kosher salt ½ tsp. of ground pepper. Combine by tossing. Top with extra cilantro. Serve with the lime wedges. |
