4 pounds Sweet Potato , peeled, quartered lengthwise, and sliced ¼ inch thick
8 tablespoons Unsalted Butter , cut into 8 pieces
6 tablespoons Heavy Cream
2 teaspoons Sugar
Salt
Black Pepper

Combine potatoes, butter, 4 tablespoons cream, sugar, 1 teaspoon salt, and ½ teaspoon pepper in Dutch oven. Cover and cook over low heat until potatoes are fall-apart tender (potatoes break apart when paring knife is inserted and gently wiggled), 1 to 1½ hours.

Off heat, use potato masher to mash potatoes until few small lumps remain. Gently fold in remaining 2 tablespoons cream and season with salt and pepper to taste. Serve.
