8 ripe Figs

splash of Rum

1 tsp ground Cinnamon

4 tbsp runny Honey

250 g Ricotta Cheese
Directions
Figs, honey and ricotta is just one of those perfect combinations. Figs are plentiful in the late summer months, and while they are delicate when ripe, the softer they are the better they taste.

Preheat the grill. In a small baking tin, toast the almonds under the grill until golden, about 2–3 minutes, turning once. Tip out and set aside. Lightly grease the tin with a bit of the butter. |

Cut the figs in half lengthways and put them cut side up in the tin, dot with the remaining butter, sprinkle with the rum (or orange juice) and the cinnamon and grill for 5 minutes until the figs are softened. |

Drizzle with the honey and divide the ricotta between 4 bowls. Top with the figs, spooning their juices over, and scatter with toasted almonds. |
