Ingredients

Adjust Servings:
1 tablespoon extra-virgin Olive Oil , plus more for drizzling
½ Red Onion , cut into small dice
2 Garlic cloves, crushed
½ teaspoon Sea Salt , plus more to taste
½ cup coarsely chopped fresh Sage , plus 3 or 4 fresh leaves for serving
Scant pinch cracked Black Pepper
1 cup cooked Chickpeas
¼ cup White Wine
½ Lemon Juice

Combine the olive oil, onion, and garlic in a skillet over medium heat. When the onion sizzles, add a pinch of salt and sauté until translucent, about 3 minutes. Add the chopped sage, pepper, chickpeas, wine, and ½ teaspoon salt.

Reduce the heat to low and simmer until the beans are heated through and the wine has reduced a bit, 5 minutes. Remove from the heat and add the lemon juice. Stir well and serve garnished with fresh sage leaves and a generous drizzle of good olive oil.
