Preheat the oven to 190°C/375°F/gas mark 5. Mix the yogurt and mustard together and coat the chicken pieces on all sides. |

Sprinkle with salt and pepper. Cut 4 pieces of foil and brush with herb or olive oil. |

Lay the chicken breasts in the foil and scatter a thick layer of English mace on each piece. Sprinkle with lemon juice. |

Wrap in the foil, folding the ends very tightly so no juices can escape. Lay the packets on a rack in the oven, cook for 30 minutes. Serve with rice and a green salad. |
