Ingredients

Adjust Servings:
1 tablespoon extra-virgin Olive Oil or canola oil
2 cups Mushrooms , finely chopped
1 Onion , finely chopped
10 cups Chicken broth
2 medium Carrots , finely chopped
2/3 cup pearl Barley
1 teaspoon chopped fresh Thyme , or ½ teaspoon dried, or more to taste
2 cups cooked chopped or shredded Chicken
¼ cup chopped fresh Parsley
Salt
freshly ground Black Pepper

Homemade chicken soup with whole-grain goodness. This is another recipe that assumes you have homemade chicken broth and cooked chicken on hand.

Heat the oil in a large soup pot over medium heat. Sauté the mushrooms and onion in the oil until the mushrooms have given up their juice, about 5 minutes. Add the broth, carrots, barley, and thyme. Bring to a boil, reduce the heat, and simmer, uncovered, for 45 minutes, until the barley is tender, stirring occasionally.

Add the chicken and parsley. Simmer for 5 minutes, until the chicken is heated through. Season to taste with salt and pepper and more thyme, if desired. Serve hot.
