Directions
Homemade chicken soup with whole-grain goodness. This is another recipe that assumes you have homemade chicken broth and cooked chicken on hand.

Heat the oil in a large soup pot over medium heat. Sauté the mushrooms and onion in the oil until the mushrooms have given up their juice, about 5 minutes. Add the broth, carrots, barley, and thyme. Bring to a boil, reduce the heat, and simmer, uncovered, for 45 minutes, until the barley is tender, stirring occasionally. |

Add the chicken and parsley. Simmer for 5 minutes, until the chicken is heated through. Season to taste with salt and pepper and more thyme, if desired. Serve hot. |
