Heat the cooking fat in the bottom of a large cast-iron pan or frying pan on medium heat. When the fat has melted and the pan is hot, add the broccolini, cover, and cook for 10 to 15 minutes, stirring occasionally. |

Add the shredded chicken and coconut pesto and stir to combine. Cook for another minute or two until everything is incorporated. |
