Ingredients

½ lb of lean Turkey

1 tbsp of Unsalted Butter

1 chopped Onion

2 chopped Carrots

2 chopped stalks of Celery

2 minced cloves of Garlic

2 tbsp of Flour

½ tsp of Kosher Salt

ground Black Pepper

3½ cups of Chicken broth

10 oz of peeled, diced Potatoes

¼ head wedge-cut with stem-attached Cauliflower

1¾ cups of Cheddar Cheese

2 tbsp Green Onion
Directions
This soup is so good! It has a thick consistency and cheesy taste, with plenty of potato chunks and turkey. The cauliflower is not used in all cheeseburger soup recipes, but it makes it velvety and rich.

Place turkey and a bit of oil in skillet. Brown it and break into pieces while it is cooking. Drain meat. Place in small sized bowl. |

Melt butter in pressure pot. Add garlic, celery, carrots and onions. Stir while cooking till they soften. |

Add salt, ground pepper and flour. Cook and stir for a minute or so, so flour cooks. Pour turkey in pressure pot. Add broth, cauliflower and potatoes. |

Seal. Select High pressure and cook for about 10 minutes. Potatoes should be soft. Do a quick pressure release. Open lid after pressure has subsided. |

Transfer cauliflower and a cup of pressure pot liquid to food processor. Blend till it is smooth. Pour back into pot. |
