Ingredients

For the Steaks
1 Celeriac
4 tbsp Olive Oil
4 tbsp Apple Cider Vinegar
3 tbsp Soy Sauce
2 tbsp Maple Syrup
For the Rub
3½ tsp Fennel Seeds
1½ tsp Coriander Seeds
1 tsp coarse Sea Salt
1 tsp Black Pepper
½ tsp Rosemary

Celeriac steak with fennel BBQ rub recipe

Steps

Cut the celeriac into 2 ½-cm-thick slices. Put the slices into a saucepan with plenty of water and bring to the boil. Parboil for 15 minutes over a medium heat.

Mix the olive oil, vinegar, soy sauce and maple syrup until smooth. Add the still hot celeriac slices to this marinade and marinate for at least 4 hours in the refrigerator.

Crush all the ingredients for the rub in a mortar.

Take the celeriac out of the marinade and dredge the slices in the fennel BBQ rub, turning them over and pressing well.

Grill the steaks over direct heat for 4–5 minutes each side.
