Directions
This carrot stew recipe is an adaptation of the ever-popular red tomato stew which many African countries love. This recipe replaces the tomatoes with carrots is packed full of vitamins A and C.

Peel and rinse carrots then cut into smaller pieces. |

Transfer pieces of carrots into a blender, add ½ cup of water and blend until smooth. |

Place a pot on medium heat and add oil. |

When the oil has heated up, add onions and fry for 2 minutes. |

Add tomato paste and dried mixed herbs and fry for 3 minutes. |

Add blended carrot and mix with tomato paste and onions. |

Add seasoning powder to desired taste and mix together. |

Allow to cook for 10 - 15 minutes approx. before turning off the heat. Serve with rice. |
