½ teaspoon Lemon extract
½ teaspoon Almond Extract
2 cups (approx. 16 oz) silken Tofu
1 Cantaloupe

Cut the cantaloupe in quarters. Remove the fruit from the peel, slice into bite-sized pieces, and return to the peel.

Combine the cherries, lemon extract, almond extract, and tofu in a food processor or blender and purée until smooth.

Place the cherry cream in a dessert dish and serve with the sliced cantaloupe. Garnish with sliced lemon.
