½ teaspoon Xanthan Gum

2 teaspoons organic Cane Sugar

1 teaspoon Baking Powder

¾ teaspoon Salt

3 to 4 tablespoons Water
Directions
Instead of traditional Ritz crackers, try substituting these crackers. They are flaky, buttery (without the dairy), and salty with just a hint of sweet. Serve them with your favorite soup, or add a layer of Sunflower Seed Butter to build cracker sandwiches.

Preheat the oven to 375°F (190°C). Line a large baking sheet with parchment paper. |

Combine the flours, xanthan gum, sugar, baking powder, and ½ teaspoon salt in a large mixing bowl. |

Add the oil and 3 tablespoons of water. Use a spoon to combine the ingredients, then use your hands to knead the liquids into the dough. Add up to 1 tablespoon of additional water as needed, ½ tablespoon at a time, until the dough is smooth. |

Place the dough between two sheets of parchment paper and roll to ⅛ inch (3 mm) thick. Remove the top sheet of parchment. Use a small cookie cutter or biscuit cutter to create crackers about 1¼ inches (3 cm) round. |

Remove excess dough and transfer the formed crackers to the prepared baking sheet, with space in between. Roll out the remaining dough, cut crackers, and transfer them to the baking sheet, until all of the dough is used. |

Use a fork to poke tiny holes into the crackers. Sprinkle the tops of the crackers with the remaining salt, if desired. |

Bake for 9 to 10 minutes, until the tops are just golden. Store them in an airtight container at room temperature for up to 3 days. |
