Directions
This fresh and flavorful bulgur salad showcases sweet grapes and tangy feta cheese. We softened the bulgur in water, lemon juice, and salt. Once the bulgur was tender, we tossed it with more fresh lemon juice, cumin, and cayenne for depth of flavor, along with the grapes and feta. Quartering the grapes ensured we got some sweetness in every bite. Scallions and mint gave the salad plenty of bright, fresh flavor. Finally, for textural contrast, we added crunchy toasted almonds. When making this salad ahead, we found that the delicate ingredients (grapes, almonds, feta, and herbs) mushed and dulled in flavor after sitting overnight. Instead, we opted to leave these items out until just before serving to keep everything fresh and crisp. When shopping, don’t confuse bulgur with cracked wheat, which has a much longer cooking time and will not work in this recipe.
