1 lb (450 g) Brussels sprouts

6 slices (rashers) of Bacon

1 lb (450 g) Red Onion

1 large Pear

½ tsp Sea Salt

Melt the coconut oil in a roasting pan in the oven at 350F. |

Trim the sprouts, cut them in half and carefully toss them in the hot coconut oil. Roast them in the oven for 20 minutes they will be just turning golden brown. |

Meanwhile, cook the bacon and onion in a pan over medium heat for about 10 minutes. |

Add the pears chunks, season with sea salt and pepper and stir well. Continue cooking until the bacon is cooked, the onion and pear softened – about 5 minutes. |

Add the roasted sprouts and mix well until the sprouts are heated through. |
