Ingredients

3½ Tablespoons of Butter
½ cup + 2 Tablespoons of whole Milk
2 Egg
¼ teaspoons of Salt
¾ cups of all-purpose Flour
For the Filling
4 ounces of Cream Cheese
¼ cup of Powdered Sugar
1 tablespoon of Lemon Juice
½ teaspoons of Lemon Zest
½ teaspoons of pure Vanilla
½ cup of heavy Whipping Cream
Berries of your choice, for topping

If you have the sudden urge to spoil yourself, then this is one crepe dish that will certainly do the trick for you. It combines a delicious breakfast dish with a dessert classic.

Prepare the crepes. In a bowl, add in the butter, whole milk, eggs, dash of salt and all-purpose flour. Stir well until smooth in consistency.

In a skillet set over medium to high heat, grease with cooking spray. Add ¼ cup of the crepe batter. Swirl the skillet around to coat the bottom with the batter. Cook for 1 to 2 minutes. Flip. Continue to cook for 1 minute or until gold. Remove and transfer onto a plate. Repeat and set the crepes aside.

Prepare the filling. In a bowl, add in the soft cream cheese, powdered sugar, pure vanilla, lemon juice and zest. Beat with an electric mixer until smooth in consistency.

In the center of each crepe, spread the filling. Roll tightly and transfer onto serving plates with the seam side facing down.
