These savory and delicious potatoes make a quick breakfast or weeknight side dish. They are simple to make and so flavorful! They pair perfectly with eggs and bacon. We also like to roll up these potatoes in a tortilla with scrambled eggs to make breakfast burritos. There are so many yummy ways to enjoy them!

n a large skillet, melt the butter over medium heat. Add the onion and cook for 1 to 2 minutes. Add the potatoes and stir to combine. Reduce the heat to low and sprinkle the salt, parsley, and pepper on top. Make sure the potatoes line the pan in an even layer. Cook for 15 to 20 minutes, flipping the potatoes every 5 minutes. Don’t flip them too often, as you want the butter to caramelize them. Patience is key.
