2 large Egg
Sea Salt
Ground Black Pepper , to taste
1 Wholemeal Wrap
1 small handful baby Spinach leaves
½ medium Tomato , diced
½ spring Onion , thinly sliced
25 g Avocado , diced
20 g reduced-fat Cheddar Cheese , grated

Whisk the eggs, salt and pepper together in a small bowl. Heat a non-stick frying pan over medium heat and pour in the egg mixture. As the egg mixture begins to set, gently push it across the pan with a wooden spoon to form large folds. Ensure that you push from different directions and also include the mixture from around the edge of the pan. Do not stir constantly. Continue until no visible liquid egg remains and remove from the heat immediately.

To serve, place the wrap on a serving plate and place the scrambled egg, spinach, tomato, spring onion, avocado and cheese down the middle. Fold over the end and roll up to enclose the filling.
