Halve the radishes, season them with salt and leave to stand for 10 minutes. Then rinse in plenty of water. |

Heat a cast-iron frying pan over direct heat. Melt the butter in the pan, add the radishes and pepper, and braise over indirect heat for 12–15 minutes, turning them from time to time. |

Stir in the lemon zest shortly before they finish cooking. |
