1½ cup (375 ml) cake Flour

3 tbsp (45 ml) Sugar

1 tsp (5 ml) Salt

4 tsp (20 ml) Baking Powder

1 cup (250 ml) wild Newfoundland Blueberries

1 large Egg

1 cup (250 ml) whole Milk

2 tbsp (30 ml) melted Butter
Directions
Blueberries are so good for you I think we should eat them at every opportunity. A muffin laden with wild Newfoundland blueberries is most enjoyable. My friend Anne Squires, owner of Exit Realty on the Rock, loves this recipe and has even helped me bake a batch.

Preheat oven to 400 F (200 C). Mix cake flour, sugar, salt, and baking powder together in large bowl. Add blueberries and mix gently through flour mixture. Make a well in the centre of the flour mixture. In a separate bowl, stir together egg, milk, and butter. Add liquid to dry |
