2 teaspoons extra virgin Olive Oil

¼ Onion

1 Tomato

14 oz (1 x 400-g) can of Black Beans

2 teaspoons of freshly chopped Coriander

1 teaspoon ground Cumin

pinch of Sea Salt

pinch of freshly ground Black Pepper

½ teaspoon Chili Powder

1 freshly squeezed Lime Juice

2 Green Onion

Heat 1 teaspoon of the olive oil in a saucepan over a medium heat. Fry the onion and tomato until soft and the onions have browned, then allow to cool for a few minutes. |

Transfer the onion and tomato to a food processor and add the black beans, coriander/cilantro, cumin, salt, pepper and chilli/chili powder, if using. Pulse until mostly smooth, to your preference you may want it a little on the chunky side. Garnish with the remaining olive oil and the spring onions/scallions. |
