Combine milk and next 3 ingredients in a medium saucepan. Cover and cook over low heat about 40 minutes or until rice is tender, stirring occasionally. |

Whisk together eggs yolks, sugar, and ½ cup milk in a medium bowl. Gradually stir about one-fourth of hot rice mixture into eggs; add egg mixture to remaining hot rice mixture, stirring constantly. Cook over low heat, stir-ring constantly, until mixture reaches 160° and is thickened and bubbly (about 10 minutes). Garnish with cinnamon, if desired. Serve either warm or chilled. |
