3 to 4 cloves Garlic

1 fresh or dried Chili Pepper

Generous pinch of Salt

1 lb (500 g) raw shell-on Shrimp

¼ cup (65 ml) pilsner-style Beer

2 Green Onion

Set a wok over medium heat. When it just starts to get hot, add the oil and swirl to coat. Add the garlic, chilli pepper and salt and fry until fragrant, about 15 to 30 seconds. |

Add the shrimp and immediately begin tossing, using your spatula to scoop the oil all over the shrimp and bathe it in the garlicky oil. |

Pour the beer in and immediately cover. Steam the shrimp for 3 to 4 minutes, until cooked through. Toss in the green onions and mix well. Serve immediately. |
