Ingredients

2 teaspoons Olive Oil
5 ounces top Sirloin Steak , visible fat removed, cut into thin strips
1 orange Bell Peppers , seeded and cut into thin strips
4 Scallions , finely chopped
1–2 fresh Jalapeno Pepper , seeded and thinly sliced
2 Garlic cloves, finely chopped
2 cups Snow Peas , halved diagonally
4 ounces large Portobello Mushrooms , sliced
2 teaspoons Hoisin Sauce
1 tablespoon Orange Juice
5 cups Arugula or watercress
4 tablespoons Sweet Chili Sauce dip , to serve

Beef is high in iron and the vegetables in this dish are rich in vitamin C, which helps us to absorb the iron, making it a great combination.

Heat the oil in a wok over medium–high heat for 30 seconds. Add the beef and stir-fry for 1 minute, or until browned. Transfer to a plate with a slotted spoon.

Add the orange bell pepper, scallions, jalapeño chiles, and garlic to the wok and stir-fry for 2 minutes. Add the snow peas and mushrooms and stir-fry for an additional 2 minutes.

Return the beef to the wok. Add the hoisin sauce and orange juice and stir-fry for 2–3 minutes, or until the beef is cooked and the vegetables are tender but still firm. Add the arugula and stir-fry until it starts to wilt. Serve immediately with a small bowl of sweet chili dipping sauce.
