Ingredients

8 Poblano Peppers chilies, deseeded
3 cups boiled Pinto Beans , mashed
1 cup Mozzarella Cheese , grated
1 large Onion , finely chopped
Olive Oil for greasing
Salt
Black Pepper to taste

Baked poblano peppers stuffed with pinto beans and mozzarella cheese!

Steps

Preheat the oven to 350ºF.

Lightly grease a baking dish with olive oil spray.

Combine mashed pinto beans, onion, mozzarella cheese, salt and pepper in a bowl. Mix well until all the ingredients are uniformly combine.

Now, stuff the poblano peppers with prepared mix. Then, put the peppers in prepared baking dish.

Bake for 15-20 minutes or until cheese melts down completely and pepper is cooked through.

Once done, remove the tray from oven and place it over a wire rack to cool down a bit. Serve hot!
