Preheat the oven to 350ºF. |

Lightly grease a baking dish with olive oil spray. |

Combine mashed pinto beans, onion, mozzarella cheese, salt and pepper in a bowl. Mix well until all the ingredients are uniformly combine. |

Now, stuff the poblano peppers with prepared mix. Then, put the peppers in prepared baking dish. |

Bake for 15-20 minutes or until cheese melts down completely and pepper is cooked through. |

Once done, remove the tray from oven and place it over a wire rack to cool down a bit. Serve hot! |
