¼ cup Orange Juice
½ teaspoon grated Orange Zest
1 teaspoon ground Cinnamon
1 teaspoon Vanilla Extract
3 ripe Banana , chopped
¼ cup golden Raisins
¼ cup dark Raisins
Vegan Crepes
¾ cup whole Wheat Pastry Flour
¼ cup organic Soy Flour
½ teaspoon Baking Soda
Pinch Sea Salt
1 cup vanilla Almond Milk
1 tablespoon Walnut Oil
2 tablespoons Maple Sugar
2 or 3 tablespoons Sunflower Oil

Filling

Place maple sugar, maple syrup, orange juice, orange zest, cinnamon, and vanilla extract in a small saucepan and simmer over low heat for 10 minutes.

Add the bananas and raisins, and simmer for another 5 minutes. Set aside.

Vegan Crepes

Mix together flour, baking soda, and salt.

Combine almond milk, walnut oil, and maple sugar and mix well.

Make a well in the flour; add the almond milk mixture and blend until smooth.

Heat sunflower oil in a skillet over high heat.

Add ¼ cup batter to the hot skillet. Cook until bubbles appear and carefully flip to the other side. Cook until golden brown on both sides.
